My name is Carolyn, and I started VeganEaten because I heard so many “OMG, I could never go VEGAN but I love your Instagram posts!” and “Will you come be my personal chef?” and “I have no idea how to cook, so I can’t eat the way you do” and “I don’t have time”.
I’m a Culinary Institute of America graduate and I have worked in restaurant kitchens for the past 8 years. I started following a mostly vegan diet three years ago and, while I have fallen off the wagon multiple times, it’s been a hell of a lot easier to get back on when I know how delicious vegan food can be, how much my stress level is reduced, and how much more alive I feel when I eat this way.
Classify me under vegan with a love of pig, because BACON!
I’m not going to make you eat this way. I’m not going to stand over your shoulder and call you out every time you eat cheese, use butter, or honey, or any of the other sins that Vegan Nazis will crucify you for. You’re a grown ass adult. Eat your cheese.
I am incredibly passionate about the food that I make and eat. It’s something that I have always loved and has given me more confidence than anything else. Friends, colleagues, and even a pain in the butt of a manager I worked for have all asked me how I keep it up.
